We use the Yabukita variety grown in the Minamiyamashiro and Tanabe regions.
Tea from Minamiyamashiro offers a fragrant aroma with a pleasant bitterness,
while tea from Tanabe has a deep green color and rich umami flavor.
By blending the two, we bring out the best qualities of each origin.
Yabukita is generally considered a variety suited for sencha, and rarely treated as a high-grade matcha.
However, since it is the most widely cultivated variety in Japan,
we see it as the foundation of our tea-making — and devote great care to perfecting it.
